SPCA Cupcake Day 2017

The SPCA have been running their annual SPCA Cupcake Day fundraiser for a little while now and what a better way to get the public involved, build awareness and raise money for animals in need because who doesn’t love cake!

Teaming up with Shannon from Be My Light Blog and the local Hamilton restaurant Dough Bros, we pulled off our very own SPCA Cupcake Day event to raise money and fight animal cruelty with cupcakes. Shannon and Dough Bros took care of the planning, social and running and I had one job, to bake! I really wanted to do some crazy experimental favours and combinations, however decided to simply go for some crowd pleasers and hit he classics. I went with 5 different flavours, Lemon Meringue, Red Velvet, Triple Choc, Salted Caramel Popcorn and Vanilla Berry which was my gluten/dairy/egg free option. As far as I know all of these flavours were a hit and made the early morning wake ups worth while!

Our weekend goal was to raise $500 for the SPCA, and I’m pleased to announce that we landed around $750 profit for our efforts on the day as well as a few online donations. So the event as a whole was a great success and we all had a great time putting it together. I’m looking forward to next year’s Cupcake Day where I may have to up my game, perhaps I should start planning now!

Thanks to all those who attended the event and come along to support not only use, but the SPCA and all of the animals they work with.

I’ve become slightly obsessed with making fresh I’ve become slightly obsessed with making fresh fruit slushies and frozen cocktail this summer. It’s been a great way to cool down and also enjoy a warm evening or two with friends. Below is a recipe for an Aperol Spritz Slushie that I’ve really been enjoying recently. Super quick and easy to make, especially since the 3X Bluicer Pro from @brevilleappliancesnz not only crushes the ice and blends everything together, I can also juice fresh oranges and lemons directly into the blending jug. Perfect for summer entertaining, let me know if you try this quick Slushie recipe.

Aperol Spritz Slushie
——
2 oranges
2 lemons
80ml Aperol (1/3 Cup)
125ml Prosecco (1/2 Cup)
2 Tablespoons Caster Sugar
3 cups of Ice

Method:
1. Add Aperol, Prosecco, sugar and ice cubes, into the blender jug and attach to juicer spout.
2. Turn variable speed dial to Speed 1 and juice oranges and lemons.
3. Remove juicer attachment and place blender jug onto motor base, close lid securely.
4. Select Frozen Cocktail program.
5. Pour mix into short glasses and serve topped with a slice of orange. Serves 3-4
